An Italian Mom’s Meatballs

FROM THE KITCHEN OF TINA D’ORAZIO GEDGARD (Her Mom’s Recipe)

INGREDIENTS:

  • 1 tablespoon olive oil
  • 2 cans (24 oz each) tomato sauce
  • 2 pounds of mixed meat — I use turkey, beef & pork combined together to make 2lbs
  • 2 cups breadcrumbs
  • 3 eggs
  • 1/2 cup romano cheese
  • 1/2 cup water

Directions:

  • Beat the 3 eggs in a bowl.
  • Combine the meat in a bowl and all the other ingredients that follow.
  • Form meatballs in the palm of your hands — take a chunk of the meat mixture and roll into a ball.
  • Once finished, place a few meatballs at a time in a skillet/frying pan with a little olive oil.
  • Brown each meatball slightly, not cooking them all the way.  This will help hold the meatball together.
  • Place aside on a paper towel & plate to drain excess oil.
  • Pour the tomato sauce into a stockpot over a medium low flame.
  • Add the meatballs carefully. Stir.
  • Simmer 1 hour or so in the sauce.  Serve!
