Gourmet Cheese Grits

From the kitchen of Jennie Greene…or maybe Carrie Pier…or maybe…

Ingredients:

  • 1 qt milk
  • 1/2 cup butter
  • 1 cup uncooked grits
  • 1 tsp salt
  • 1/2 ground white pepper
  • 1 egg
  • 1/3 cup of butter
  • 4 oz gruyere (I always use more!) grated
  • 1/2 cup grated fresh parm cheese

Directions:

  • Bring milk to a boil over medium heat, stirring often.  
  • Add 1/2 cup butter and grits.  
  • Cook, stirring constantly, until mixture is the consistency of oatmeal (about 5 mins)  
  • Remove grits from heat.  
  • Add salt, pepper and egg, beating until well combined.  
  • Add 1/3 cup butter and the gruyere cheese.  
  • Pour into a greased 2 qt casserole dish.  
  • Sprinkle with parm cheese.  
  • Bake at 350 for 1 hour.
