Strawberry, Pecan & Goat Cheese Salad
From the kitchen of Margaret Donovan Struble, mother of six; her son-in-law asked her if it was a dessert salad (!)
One bag baby field greens
small goat cheese log (or already crumbled)
Glazed pecans (Emerald brand sells them in green bags)
Plain pecan pieces
Fresh strawberries, sliced
Raspberry walnut vinaigrette
Crush some glazed pecans & mix with plain ones. Set aside.
Empty greens into bowl
Crumble goat cheese log with a fork, sprinkle over the greens
Add pecans & strawberries, drizzle with dressing, toss gently, serve immediately!
