Tomato Tart

From the kitchen of Margaret Donovan Struble, a mother of 6 and incredible woman!


1 frozen pie crust
4-5 roma tomatoes
1 cup loosely packed fresh basil leaves
4 large cloves of garlic – I usually use more
1 ½ cup grated mozzarella cheese
½ cup mayonnaise
¼ cup grated parmesan cheese
Dash of pepper
Dash of salt
Splash of olive oil

Pre cook pie crust as directed on package
Right out of the oven sprinkle ½ cup mozzarella cheese on crust
Cut tomatoes into wedges, sprinkle with dash of salt, let drain on paper towels for 15 min.
In food processor combine  basil & garlic , drizzle with olive oil, pulse until coarsely chopped
In bowl combine remaining mozzarella, parmesan, mayo & pepper.
Arrange tomato wedges in pin wheel on top of cheese
Sprinkle basil garlic mixture over tomatoes
Spoon cheese mixture over basil, smooth to cover
Cook in 375 oven, 30 min or until top is golden & bubbly

One time I did not have any mozzarella in the house so I used  more parmesan  &  goat cheese instead, it was delicious!
