Easy Beef Stew

November 28, 2009 by

From: Kat’s kitchen. This is an EASY easy recipe that will definitely be loved by kids and adults! Feel free to add vegetables; however, it’s great without. It reminds me of a Stroganoff when you see it on the plate, but it is definitely a stew. Definitely try it! Easy and quick to make before shuffling kids off to school… or to throw in a pot on a Sat or Sun morning for guests who are arriving that night.

2 pounds beef stew meat, cut into 1-inch cubes

4 ounces mushrooms, canned
8 oz. fresh mushrooms (optional, esp. if you like mushrooms, definitely add these!!)
1 envelope dry onion soup mix
3/4 cup red wine
10 ounces cream of mushroom soup, canned & undiluted
10 can of tomato soup

2 heaping TBL garlic

1 lb. of hot cooked noodles

Combine all ingredients in Crock-Pot® slow cooker.
Cover and cook on Low for 8 to 12 hours. Serve over hot cooked noodles.

(Note: browning the beef before cooking is not necessary, but it does help to enhance the flavor and appearance of the stew. If it’s just for your family, I would (and do!) skip this step. If you have time, just spray a skillet with non-stick spray, and brown the meat; then place in crockpot).
