Irish Soda Bread
Margaret Donovan Struble makes this for her six children when they all come home!
4 cups all purpose flour
1 cup sugar
1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt
2 cups sour cream
1 cup raisins
Preheat oven to 325. Grease 2 - 8×4 loaf pans.
Mix flour, sugar, salt, baking soda & baking powder, add raisins to coat. Add eggs & sour cream, mix until just combined.
Distribute batter evenly between the two pans
Bake at 325 for 1 hour. Slice & butter. Eat one, freeze the other.
I have to make this when all the kids come home!
