Mole Chili – Fabulous! Has cocoa and cinnamon in it… You’ll LOVE it!

This is a Slow Cooker Recipe

Talk about a diamond in the ruff…. this Chili is the BEST I’ve ever had. It has a smidge of cinnamon and unsweetened cocoa in it (that you can NOT taste), but it makes it soo smooth, it’s not even funny. The flavor is out of this world. You won’t make any other chili every again.

“Mole” is: it’s a spicy Mexican sauce made w/a blend of onions, garlic, a mixture of chilis and Mexican chocolate. To mimic Mexican chocolate, I’m going to use cinnamon and cocoa powder for the richness, without the sweetness

(PS – looks like a ton of ingredients… it’s really not. Just pull all of the spices out that are needed, along with your measuring spoon; pop ‘em next to your slow cooker, and dump in as you go down the list)

INGREDIENTS:


1 1/2 lb lean (at least 80%) ground beef
1 bag of FROZEN, diced onions (or 2 medium onions, chopped, approx. 1 cup)
6 heaping TBL. of (jarred) minced garlic (or 6 cloves garlic, finely chopped)
1 can (28 oz) diced or whole tomatoes (chopped well) – do not drain
1 jar (16 oz) Chunky salsa

cans (15 to 16 oz each) any kind of bean (I use Pinto), do not drain
tablespoons unsweetened baking cocoa
teaspoon ground cinnamon
teaspoons ground cumin
teaspoons smoked paprika
teaspoons chili powder
teaspoon salt
1/2 cup chopped fresh cilantro (Personally, I despise cilantro, so I do not include this)

DIRECTIONS

1. In 12-inch skillet, cook beef, onion and garlic over medium-high heat 5 to 7 minutes. Sautee until meat is brown and cooked thoroughly; drain.
2. In approx. a 4 or 5 quart slow cooker, pour in beef mixture.

Add all remaining ingredients except cilantro.

3. Cover the crockpot; cook on Low heat setting 7 to 8 hours, or high 3 to 4 hours. Top individual servings with sour cream (my favorite!), and/or shredded cheese, and/or cilantro
